Pale rosé. Nose and mouth of white flowers and roses. A lively and delicate mouth feel, finishing with citrus. This luscious and textural blend is very much a food wine; rich currant flavours provided by Grenache and tangy raspberry from Cinsault before a dry and fresh finish.
In the heart of the Languedoc area, the IGP Cotes de Thau is located along the western shores of the Thau Lake at the foot of the ancient volcano of Agde.
The grapes are sourced from vineyards cultivated near to Lake Thau, set in a formerly volcanic region just inland from the sea. This has a particular micro-climate - as the proximity of the water has a moderating affect on the typically Mediterranean temperatures, allowing optimal ripening whilst retaining fresh acidity. The grapes are harvested in the early morning, then the wine is vinified as a classic rosé de presse, with soft pressing and cold fermentation.
The IGP Cotes de Thau is a specific area where this massive lake has a moderating influence on the strong Mediterranean climate.
The effects of this mild temperature permit a better ripeness cycle which protect the acidity and the finesse of the aromas, so a required parameters on white and rosé grape varieties.
On top of the geological identity (at the foot of the ancient volcano), the THAU lake and his microclimate support and facilitate the biodiversity, a key advantage for the viticulture practises.
