Like all good Elgin Sauvignon Blanc's, this is an incredibly aromatic and expressive wine. Aromas of kiwi fruit, lime, sliced apple and pineapple abound on a rich palate balanced with firm grassy notes with a hint of asparagus. Altogether this makes for a hugely pleasing Sauvignon Blanc entirely true to its sense of place.

It was the simple love of Loire Chenin Blanc that first led them to South Africa in 1994, where they pioneered the wild ferment style that has now been adopted by many producers in this region. Since then they have been exploring the country's amazing vineyards to make fabulous wines from specific sites and plots that scream location, location, terroir. The home-grown South African winemaking team of JD Rossouw and Ryno Booysen drive the energy and enthuasiam for expressing the loveliest wines from their country, along with Samantha Bailey's expertise in finesse. The key is knowing the characteristics of each plot, understanding the benefits each cultivar can bring, breaking rules and pushing boundaries. They use a combination of knowledge, a love of nature and science to create versatile, expressive and food-friendly wines from a country that has been making wine for 360 years.

This Sauvignon Blanc comes from vineyards in Elgin, traditionally an apple growing region. The famously bowl-shaped topography of this maritime valley encourages self-regulating cooler temperature control: as the ground heats up, the valley sucks in colder Atlantic air causing clouds to condense and form a protective cover from the sun. To beat the heat, Elgin Sauvignon Blanc is picked in the early morning hours and transported to the winery in chilled trucks.

The grapes are placed in a chiller room before being gently crushed to maximise all that crunchy appeal. Finally, the wine is fermented and racked into steel before being gently filtered and bottled.

Freshly cut grass, hints of asparagus and sliced red apple flavours make this the perfect match for sea bass grilled on the braai.
