The Pinot Gris grapes are sourced from a single vineyard in Nelson, New Zealand, a region known for its cooler climate that allows this variety to thrive. The grapes are hand-picked at full ripeness, ensuring optimal flavor development and balance.
After harvesting, the grapes are gently pressed and cold-settled in stainless steel tanks. The pressing juices are separated into free run and pressings, allowing for better integration in the final wine. Both juice components are then racked together and fermented at an average temperature of 14°C. This controlled fermentation process naturally results in 4.5g/l residual sugar, creating a harmonious balance of sweetness and acidity in the wine.
