A fresh, ripe, unoaked, dry white from a grape usually known for making Vin Santo
Appealing aromas of apple and pear with lightly floral notes. The palate is fresh yet textural with orchard and stone fruit characters, a touch of honey and white spice, and a lightly nutty finish.
Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy. The winery began as a consortium of associated grape growers in 1950, with a dedicated winery at Ravina di Trento built in 1964. Today It unites 11 separate cellars and their combined 4,500 grape growers across 7,000 hectares of vineyard, to produce an impressively broad portfolio from an intriguing palette of indigenous and international grape varieties.
The Nosiola grapes are sourced from the Valle dei Laghi on the slopes of the Calavino mountains, where the large difference between day and night temperatures favours crisp, aromatic wines. The vines grow in the alluvial soils of ancient glacial terrain, at 200-300 metres altitude.
After hand harvesting and careful selection, the bunches are softly pressed and then fermented at a controlled temperature. The wine is refined in stainless steel for four months.
