Cavit is a modern and forward-thinking co-operative group in the mountainous Trentino region of northeast Italy whose 11 cellars are responsible for 60% of the region's wine production. The endless permutations offered from their members' 7,000 hectares of vineyard, combined with an intriguing palette of indigenous and international grape varieties, enable Cavit to offer a broad range which excels at every level. The scale of production, combined with ultra-modern winemaking facilities, understandably makes Cavit one of Italy's most reliable sources of well-made, competitively priced wines.
The Pinot Noir grapes are sourced from the Oltrepò Pavese zone, of Pavia, south of the River Po. The vineyards can be found over the hillsides of the Apennines, at altitudes of 200-400 metres. Soils are typically clay with some silt and chalk.
The grapes undergo a 6 to 8-day maceration at 26°C. When fermentation is completed the wine is racked to stainless steel tanks, where it remains until malolactic fermentation is complete. The wine then rests in stainless steel and medium-sized oak barrels for at least six months before bottling.
