Nicknamed El Coyote by the vineyard workers due to the number of Coyotes found roaming and howling on the site.
Aromas of pear, nutmeg, honeydew, lemon zest with just a hint of butter. On the palate: Fuji apple, vanilla & baking spices. Bright, clean with a creamy texture.
Clay Shannon is the name of the winery, but he is also the founder and owner of the estate and winery, along with his wife Angie Shannon. Clay began his career as a vineyard manager, farming the wine regions of California. In 1996 he decided to set out on his own to establish a progressive, pioneering winery and ranch in Lake County, California. Now owner of Shannon Family of Wines, his passion is simple, “Grow the best fruit possible, while preserving the land for future generationsâ€.
Made from organically-grown grapes from Shannon's Knolls vineyard in Lake County. The vineyard is planted with 3 different clones, clone 4, 76 and 95. Clone 4 is the most tropical, and clone 76 and 95 have more mid pallet weight and structure when grown on volcanic soils.
Clay Shannon Chardonnay is barrel aged in 25% new French oak for 6 months.
This beautifully balanced Lake County Chardonnay is a versatile companion to a range of dishes. Its bright acidity and creamy texture make it a perfect match for buttery seafood like seared scallops or a classic lobster roll. The notes of apple and baking spices complement roast chicken with herbs, while the hint of vanilla and nutmeg pairs wonderfully with creamy pasta dishes such as carbonara.
